Definition: Source: Www.wikipedia.org iOS jailbreaking, or simply jailbreaking, is the process of removing the limitations imposed by Apple on devices running the iOS operating system through use of custom kernels. Such devices include the iPhone, iPod touch, iPad, and 2nd Gen Apple TV.
Jailbreaking allows users to gain root access to the operating system, allowing iOS users to download additional applications, extensions, and themes that are unavailable through the official Apple App Store. A jailbroken iPhone, iPod touch, or iPad running iOS can still use the App Store, iTunes, and other normal functions, such as making telephone calls. The term 'jailbreaking' has also been applied to other computer systems, such as the Sony Playstation 3. Jailbreaking is a form of privilege escalation. It can be done from jailbreakme.com , via your iDevice, or through other forms of resources such as Absinthe via Greenpois0n or redsn0w Jailbreaking is completely safe and will not cause any software damage to your device. Apple has declared it legal.
The main reason for jailbreaking is the high level of customisation in the OS. It is completely legal in most countries (including United States and United Kingdom) and will not void your warranty unless you download software from illegal sources. (which have been removed)

Free tweaks
Removes limitations on software downloads
Tweaks - things using iOS like adding widgets to notifications centre or changing icons or keyboard colours and sliders.
DreamBoard - DreamBoard is an application for jailbroken devices which lets you choose different home screen themes for your device such as making the home screen look like and have the same controls as other devices like Windows Phone 7 UI or Android UI or even a mock up of Mac OSX Lion.
Cydia - Cydia is the App Store for jailbroken devices allowing jailbroken users to add tweaks and other jailbreak apps to your jailbroken device.
CONS / REASONS NOT TO JAILBREAK
Downloading more than 30 tweaks could slow down your device
May void warranty if installing from illegal sources (most are being removed)
People who are not so tech savvy may not know how to remove the jailbreak
Some tweaks are just plain silly.
